Jamaican Beef Patties
Dough Recipe:
4 Cups AP Flour
6 Teaspoon Sugar
4 Teaspoon Turmeric
1 & 1/2 Teaspoon Curry Powder
1 & 1/2 Teaspoon Kosher Salt
1/4 Teaspoon Baking Powder
1/2 Cup (98grams) Cold Shortening
2 Sticks Ice Cold Butter Cut into very small pieces ( I like to freeze it and grate it on a cheese grated for best result)
2/3 Cup Ice cold Water
1 Tablespoon White Vinegar
1 Large Egg
Step One: In Large bowl, combing flour, sugar, turmeric, curry powder, salt and baking powder.
Step Two: Use a fork to mix in shortening to the flour mixture until pea size crumbs form.
Step Three: Add Cold butter, cut into the flour shortening mixture, carful not to mash it too much.
Step Four: In a separate bowl, combine vinegar and egg with 2/3 Cup COLD water
Step Five: Using a large spoon gradually mix the water egg mixture into the flour until a soft dough forms. You can add in more water, a tablespoon at a time until a soft dough is achieved.
Step Six: Cover and refrigerate for 20 minutes.
Filling:
1 1/3 Cup Chopped Scallions
2/3 Cup Chopped White Onion
4 Teaspoon Fresh Thyme
4 Teaspoon Paprika
2 Teaspoon Garlic Powder
2 Teaspoon Onion Powder
2 Teaspoon Ground All Spice
2 Garlic Cloves Minced
1 Scotch Bonnet Pepper Minced- Alternately can use a jalapeno or if you don't like it spicy you can omit
1 (3/4 Inch) Chunk of Ginger
2 Teaspoons Oil
2 Pounds Ground Beef
2/3 Cup Bread Crumb
2/3 Cup Beef Stock- Chicken or Vegetable are fine too!
2 Tablespoons Brown Sugar
2 Teaspoon Salt
1/2 Teaspoon Black Pepper
Step One: Combine Scallion, onion, thyme, paprika, garlic powder, onion powder, all spice, ginger, garlic, scotch bonnet in the bowl of a food processor or blender and puree until minced.
Step Two: Heat oil in a sauté pan over medium heat, add the vegetable mixture and cook until soft, 3-5 minutes. Raise heat to medium high and add the ground beef and cook until brown 3-5 minutes
Step Three: Add breadcrumbs and beef stock, salt and pepper, lower heat to medium/ low and cook until it has thickened, 15-20 minutes.
Step Four: Once thickened nicely, cool completely!
Assembly:
Step One: Pre Heat oven to 375 Degrees F
Step Two: Divided the dough into 8 Equal Pieces
Step Three: Roll each dough out into an 8" circle, fold each circle onto itself 4- 5 times (this will create layers and pockets of butter in the dough that will steam while cooking and create delicious flakey pastry dough!) After folded onto itself roll out into the initial 8" circle again.
Step Four: Fill each circle with 1/3 cup of filling, fold over and use a fork to seal the edges together
Step Five: Bake in your preheated oven for 25-30 minutes, cool slightly and then dig in!
